We’ve had a number of requests for the recipes for some of the snacks we like to eat, so here ya go! Now go eat some fudge.

Nicole’s Mom’s Carrot Orange Cookies:
¾ cup butter
1 cup sugar
1 egg
1 cup cooked mashed carrots
2 cups flour
2 tsp. baking powder
1 tsp. vanilla
Grated rind of one large orange

Cream together butter and sugar
Add beaten egg and mashed carrot
Sift together flour and baking powder and add
Add vanilla and orange rind
Drop by spoonfuls onto greased pan and bake for 12 minutes at 400 degrees.

Vegan freezer fudge:
This recipe is from the My New Roots food blog. We adapted it while at JSH by adding a good sprinkling of Himalayan sea salt,  melting it after it was mixed and pouring it into a flat baking pan before freezing it, and then breaking it into chunks.

1 ¼ cup of buttery coconut oil
1/2 cup raw cashew butter
1 cup maple syrup
½ – ¾ cup raw cacao powder
pinch of good quality sea salt, or more… because salt + chocolate is awesome!
optional: spices such as cinnamon, cardamom, chili, cayenne…
